{Spiced Edamame Dip: a healthy alternative to hummus and guacamole}

INGREDIENTS
2 cups edamame
1/2 cup water
1/4 cup lemon juice/freshly squeezed lemon
1/2 tsp sea salt
6 tsp toasted sesame seeds
2- 3 tbsp olive oil
{optional: 1 tbsp Trader Joe’s prepared horseradish–gives the dip a Wasabi-esque kick}
1 – 1 1/2 tbsp curry powder

The Seahawks paraded out of the stadium triumphantly on Sunday.  While the 49ers fought valiantly against their opponents and impressed all of us 2nd Quarter, they failed to show the same deftness in the 4th quarter.  Next Sunday, Seahawks and Broncos will go head-to-head on the field.  As much as I wish the 49ers could represent a part of California in the Super Bowl instead, I am excited for the Seahawks!  After all, Pete Carroll successfully coached the football team of my brother’s school–USC–back in their glory days.  AND we can’t possibly forgo the Super Bowl ritual of sharing dips and chips.

In the midst of the football frenzy, it’s quite easy to binge on chips and dip, but this healthier alternative will help you control your impulsive grabs because of the dip’s high fiber content–a whopping 16 g!  Although the dip won’t be as rich and creamy as good ol’ guac or as salty as hummus, the edamame dip does enough to satiate the cravings.  At a certain point, the combination of lemon zest, nutty edamame, and spicy curry and horseradish taste create a strange addicting flavor.  Substitute potato chips with wheat thins, low-sodium pretzels, or whole grain pita chips, and you’re ready for nutritious snacking and some deafening rooting.

My stomach says dip and chip complement Mama Kim’s cracklin’ chicken for Sunday Night Football!
